Baked Avocado & Egg

Made in home Air Fryer

Serves 2

INGREDIENTS 

1 avocado

2 large eggs

¼ cup shredded cheddar cheese

jalapeno, sliced, as desired

hot sauce, to serve

METHOD

  • Cut avocado in half, lengthwise, around the pit. Remove pit and discard. Using a spoon, carve out enough avocado for an egg to fit in the hole.
  • Fill avocado halves with eggs and season with salt and pepper. Top with cheese and jalapeno slices. Transfer filled avocado halves to the basket of air fryer.
  • Set to 330ºF for 7 minutes or cook until egg whites are fully cooked, the yolk is slightly runny and cheese is melted.
  • Serve with hot sauce, if desired.

Tip: Cut outsides of avocado to create a flat side for each half.
